[Kibana settings] Check that settings documented in Observability solution docs align with the Kibana reference docs

It appears that some settings might be documented in:

• solution docs only
• kibana reference docs only
• both

We need to unify this by keeping a single source of truth and making sure engineering teams know where to make these updates for future consistency as well.
