Switch openAI instrumentation to the upstream implementation

2.18 includes an openAI instrumentation which clashes and duplicates the one in our distribution. We will turn ours off and rely on the upstream one

#763 switched the implementation, but we still need to update the docs, and then eventually remove the old one, so keeping this issue open
