ESQL: _source metadata field docs got lost

The added docs about _source are no longer rendered, though still available.

Update: docs were removed in https://github.com/elastic/elasticsearch/pull/105221/files#diff-8e63b221fb78b3a19d4455c71cf61d0123e1cd5fd08dfa29b5c58306db057a23, possibly unintentionally?

@leemthompo , could you please have a look? I can see that the ESQL metadata fields page still exists (https://www.elastic.co/docs/reference/query-languages/esql/esql-metadata-fields) but it somehow doesn't mention _source anymore.

@bpintea @alex-spies I had a crack at this because I was working on semi-related search functions updates. I also tried to improve the page structure a bit.
