This PR cleans up some files that were still using asciidoc links instead of markdown links per https://docs-v3-preview.elastic.dev/elastic/docs-builder/tree/main/syntax/links
It also removes a
get-data-stream.asciidocfile that seems to have persisted unnecessarily and removes all unused substitions fromdocset.yml.
