[APM][Profiling] Tests should pass against ECH/MKI

We want to make sure all scout tests pass on ECH/MKI, so we want to check and fix all issues in the setup to make the tests pass.

There was an issue with one of the profiling tests using the second worker: the ingested documents were doubled, so we need to investigate further

From what I checked, after this is merged, only a few tests are failing in the APM tests, namely tests that require custom roles, for some reason it doesn't work in ECH
