Release the EDOT documentation in Elastic Docs

This issue lists all the PRs and steps required to launch the EDOT (OTel) documentation in docs-content and the V3 docs:

• Update assembler.yml and navigation.yml: Update assembler.yml to add EDOT docs docs-builder#1231
• Replace old docs with redirects: Add redirections #227
• Modify links in docs-content and add repo to docset: Modify links and add repo to docset docs-content#1412
• Change elastic-otel, edot-docs, and 8-16-otel-apm-instrumentation ela.st links
• Update README file and contribution guide for EDOT docs: Edit readme and add license #229

After the migration:

• Move iOS agent docs to elastic/opentelemetry: Move documentation to elastic/opentelemetry apm-agent-ios#269
• Move Android agent docs to elastic/opentelemetry: Modify links and add repo to docset docs-content#1412
• Recover existing elastic/opentelemetry automation, if possible.
