Add rp-rs copyright to LICENSE-MIT

Some files are taken from https://github.com/thejpster/rp-hal-rp2350-public. The MIT license there (https://github.com/thejpster/rp-hal-rp2350-public/blob/main/MIT) requires that " The above copyright notice and this permission notice shall be included in all copies or substantial portions of the Software". In the absence of an embassy-rp specific LICENSE-MIT file, I've added the copyright notice to the top-level LICENSE-MIT file. Should you ever have different MIT files for each HAL, you could move this line to the file for the embassy-rp HAL, as it doesn't apply to anything else in embassy (as far as I am aware).
