Yes, HyperSync can very fast skip all the blocks where your contract doesn't have any events so that you can set start block to 0. It's just a matter of 1-2 extra requests.
This feature is specific to HyperSync, not related to HyperIndex. So RPC data-sources will have terrible performance without start block. Because a 500-5000 block range usually limits them, it'll require making a lot of requests to walk through the whole chain.
