For the record, I have created a helper function for myself:

#' @description Applies options
#' @param widget A tabulator widget object
#' @param ... Column options. See https://tabulator.info/docs/6.2/columns
#' @param .cols A vector to index the columns with. Supports R-like indexing, e.g. -1 skips the first column
#' @export
col_options <- function(widget, ..., .cols = NULL) {
  indexes <- seq_along(widget$x$options$columns)
  if (!is.null(.cols)) {
    indexes <- indexes[.cols]
  }

  for (i in indexes) {
    widget$x$options$columns[[i]] <- purrr::list_assign(widget$x$options$columns[[i]], ...)
  }

  widget
}

This could be extended to names, but even as-is I have found it convenient to use. For example:
