Fix compatibility with php-cs-fixer 3.90.0, do not rely on PhpCsFixer finder

Thank you for this PR. I would like to merge it, but since this change, the symfony/finder dependency became direct and thus must be added to composer.json as a main dependency. Can you add it, please?

@erickskrauch php-cs-fixer requirement to symfony/console has a huge range

So, I replaced this by php native RecursiveIteratorIterator. For the fixer usage it's enough I think.
