Describe the enhancement

Hi all. There's a new cheap 6 color spectra6 panel and Seeed has made a driver with their ESP32-S3 plus chip. It will be tough to support. I used the reference driver to create a custom component that loads and works. It, however, can't use the esphome spi classes since the EE02 has two individual UC8179 display controllers in master/slave configuration. And so it has more pins than the class allows and the data format gets real weird.

Hah. True words. I've just been drooling after color epaper screens for a decade now as the ultimate low-tech way to have information or photos displayed. And now there's one of decent size that costs less than a laptop. So my excitement got the best of me.

@clydebarrow No worries on the timeline, you were just the most active spi contributor I saw and I figured you might find the code interesting. Thanks for taking the time to respond.
