[Feature Request]: No (documented?) way to use IDF versions installed on the conventional way (setup.sh)

The plugin cannot use IDF installation(s) created from within an ESP-IDF (git) tree.

I keep multiple versions of the IDF installed (to reproduce historical builds when needed), and until recently, it was possible to import and use them properly. With the introduction (and exclusivity) of EIM, this feature is gone, leaving me no real option but to waste hundreds of megabytes for redundant IDF source trees on different locations.

Well, the future of those setup.sh is to use EIM too.

There is a PR to add discovery of ESP-IDF setups in EIM espressif/idf-im-ui#102

The extension can find old ESP-IDF setups in IDF_TOOLS_PATH/esp_idf.json But that is probably only if you installed ESP-IDF with extension setup wizard (from 1.x.x) or IDF Windows Installer.
Is possible to use env vars to define ESP-IDF for a given project, this is a manual approach but could just for fast test.

I'm working on a PR to document this as alternative (not recommended) ways to use ESP-IDF.
