chore: unify revm & alloy dependencies

Before this change, there were a number of dependencies that we had to
pull a couple very different versions of, like alloy-rpc-types-engine
0.4.2 and 0.11.1

At least one of the dependency upgrades requires rust v1.82.0

There were also changes in the engine API, which means that we don't
need a couple of (now missing) structures from alloy-rpc-types-engine.
