Tracking issue: Add optional proofs images

Tracking issue for adding in your corresponding CL branch for optional proofs into docker-image-builder. This makes it easy for others to run local testnets by pulling in an already built docker image into kurtosis.

Would be great if we named the branch optional-proofs for consistency and ease of search.
