User guide: Clean up overview page #1316
Description
Using exaslct for the first time, revealed some optimization potential in the User Guide, see also exasol/script-languages-container-tool#325.
- Don't abbreviate Exasclt but use user-friendly wording (see below)
- Replace "Ai-Lab" by official writing "AI Lab": no hyphen, AI in all-uppercase
- Move section "Selected Topics" to a separate page and only link it from the user guide (overview)
