generate list of expected udfs from files

in https://github.com/exasol/transformers-extension/blob/main/test/utils/db_queries.py we list the udfs we expect to be installed during deployment. this is prone to be forgotten to update when adding udfs. it would be better if those lists would be generated from the files, i.e constants files or udf files
