It's a historical question. I don't have the "correct" information, but sometimes Express means fast in English. After researching the commit history, I found a sentence in the first README that says

"Insanely fast (and small) server-side JavaScript web development framework." See README in initial commit
26 June 2009

So it's possibly comes from this and means fast
Since we couldn't chat with tj - the original author of Express - if anybody knows the corrected answer please let us know.
