Profiling categories need to be updated for recent free-threading builds

As reported by @nascheme:

Functions like the following should be marked as "gc":

`gc_mark_enqueue_no_buffer`
`gc_mark_alive_from_roots`

This will require updating the tables in `profiling_plot.py`: https://github.com/faster-cpython/bench_runner/blob/main/bench_runner/scripts/profiling_plot.py#L35
