docs: restructure FoBE documentation and update product details
- Added new index.md for FoBE documentation homepage. - Removed outdated f2101 resource files and quickstart guide. - Created new quickstart.md for FoBE Mesh Solar Power with updated content. - Updated keywords and tags for better searchability. - Adjusted sidebar categories for clarity.
