Cannot scale my ledger deployment on stack version v3.0

Good morning,
I upgraded my stack to v3.0. according to the documentation deploymentStrategy is deprecated and I should be able to scale my deployment up.
however, whenever I remove this options from my ledger k8s object it comes back. Moreover, when I try to scale the deployment up, it returns to 1 replica. I can use the single writer option, but I was under the impression that I wouldn't need to do do.
