[Bug]: Temperature theme not always applied

Requirements

• I checked the README.
• I have updated entity-progress-card to the latest available version.
• I did a search to see if there is a similar issue.

Current Behavior

I have 2 different temperature sources for the garden. Primary is a Zigbee sensor. The second one is created and populated through NodeRED. Both look identical in the developer tools' state browser. However, while for the temperature entity from the Zigbee device the temperature theme is applied, it is not for the temperature entity from NodeRED.

Expected Behavior

I went through the other bugs and I'm wondering if that might be more related to #10 instead of the sensor source. I have another temperature sensor and that also doesn't show color now when it's at -22.4°C... I'll try to do some debugging.

Test setup:

• Created a number helper with a range from -40 to 40 and unit of measurement °C
• Added an entity progress card for this number helper with the Temperature theme
• Added a mushroom number card to modify the helper

Results:
-40 - -31°C: Dark violet
-30 - -16°C: no color (grey)
-15 - -3°C: Blue
-2 - +1°C: Lighter blue
+2 - +7°C: Greenish blue
+8 - +16°C: Darker greenish blue
+16 - +17°C: no color (grey)
+18 - +19°C: Grass green
+20 - +24°C Darker green
+25 - +26°C Yellow
+27 - +28°C Orange
+29 - +33°C Dark orange
+34 - +40°C Red

If I understand the CSS correctly, at -30°C somewhere the color of .icon is set to var(--dark-blue-color) but it is overridden inline with var(--epb-icon-and-shape-color, var(--state-icon-color))... I don't have lots of practice analyzing CSS, though...

It seems that this is caused by the theme I'm using. That appears to be overriding some color variables EPC uses.

Also on my System with standard theme the following colors are not available:

As a workaround you can define this missing colors in your themes.yaml to male it work correctly.

Yes I use standard color from HA that should be defined in the original environment.
Yes you can add it by yourself but I think it's not the goal. My card must be fixed and these color must be changed :
