[gatsby-plugin-google-gtag] Ability to access gtag "set" command in gatsby-config

Hello,
I am trying to use the gtag set command to add a custom dimension to all pageviews sent by the plugin. It would be great to be able to pass an object in gatsby-config.js to the set command in the same way that the gtagConfig object is passed to the config command.
