[gatsby-source-lever] EU option

Can we add an option to configure if we want to use the global API or the EU specific API? We can then update the plugin's fetch.js to

https://api.${scope === "eu" ? "eu. : ""}lever.co/v0/postings/${site}?mode=json

I need to configure the plugin locally for now
