Mention recommended minimum CPU and Memory requirements for self-hosting

Ideally this README: https://github.com/get-convex/convex-backend/tree/main/self-hosted should mention what is the minimum amount of memory and CPU cores/etc. needed to run the default backend configuration.

My current conservative kube limits:

yep - it's a good idea.

There is no one size fits all answer
Your mileage may vary, so you can only really get a true answer by trying out your own workload. CPU you can go as low or high as you want depending on your load. Memory has some baseline usage, but increases again with your load.
