Conda gpu install doesn't appear to include docs/examples

I went through the conda installation and it appears that `/Users/[username]/miniconda3/envs/gpi_env/share/doc/gpi/Examples` doesn't get created, in fact, as near as I can tell, there is no `/Users/[username]/miniconda3/envs/gpi_env/share/doc/gpi` directory, indicating the docs didn't get installed.
