Questions regarding Assets, Accessories and all other items

I just installed this system on my local machine and tried it out to see if it could assist with a new project I'm working on. I'm curious about the relationship between assets, accessories, licenses, and other categories. I'd like to simplify the system by including only some workplace supplies, such as tablets, and some Showcase exhibits that employees can check in and out of. How do I add/change asset categories, removing Accessories, licenses, and all other types that I can't find in the database table?
