Building in the docker for binder fails

Not sure if this is the right repo. I tried using the example jupyter hub notebook from https://github.com/hasadna/open-bus-stride-client/blob/main/README.md#using-the-interactive-jupyter-notebooks and got an error building a wheel for this library.

it's a problem with upgrade of python/pip - we used a version based on timestamp which worked in the past, but in newer version it stopped working.. we need to change the way we package the project and handle versioning for the pip packages
