AWS Timestream (for LiveAnalytics) EOL

The current Timestream feature used in this project is discontinued: https://docs.aws.amazon.com/timestream/latest/developerguide/AmazonTimestreamForLiveAnalytics-availability-change.html

It's usage needs to be refactored to an alternative, e.g. [Timestream for InfluxDB](https://docs.aws.amazon.com/timestream/latest/developerguide/timestream-for-influxdb.html).
