Write logs to file

Hello,

Would it be possible to have renamarr write its log to a log file, similar to the convention other *arr projects use (writing to log files in a logs/ subdirectory)?

My concrete use case is looking at the log history for a previous invocation of renamarr.

I use Grafana Alloy/Loki to collect logs from all of my containers that output to stdout, which I can then query historically. I have an example project here if you're interested

Take a look at the link above; IMO, it's a much more robust solution that covers all your containers, not just one.

In the meantime, I'll see what I can do about writing to file. I would want it to be somewhat configurable, with a default setting of off.

As a middleground, perhaps you could add a short mention or recommendation of Grafana Alloy/Loki in the README, for other users potentially seeking the functionality I described in my OP?
