I've written my first automation with a lot of templating in it. It get messy really fast. Also the UI does weird line breaks so re-reading is hard for me.

I suggest "template snippets". A sort of helper entity which you can insert in an automation in the GUI.

Maybe control-clickable to go to the the snippet in a new tab to edit the contents.

It would be nice Editing the contents screen wide and with proper syntax markup.
