fix: add text language specifiers to all bare code blocks

Fixes MD040 markdown lint errors in:
- docs/guides/researchers.md (line 149)
- docs/reference/attribution.md (lines 93, 103, 111)
- docs/reference/faq.md (line 112)

All citation and text code blocks now have 'text' language specified.
This completes all MD040 fixes across the documentation site.
