[JS] Migrate to Koffi, support Node 24

Same as done in https://github.com/openwallet-foundation/askar-wrapper-javascript/pull/72

Might make sense to also migrate to vitest/pnpm/biome/changesets to keep the setup consitent. (will make it easier to 'copy' changes made to the other wrappers
