"Was flower peak und intensity angeht: ist es möglich dass der Beobachter default flower intensity viorgegeben bekommt und wenn er das nicht eintragen möchte, er die Spalte peak flowering yes/no/missed/unsure bekommt?"
If the observer does not want to fill out flowering intensity (which should be the default option) he should be able / forced as an alternative to fill out "flowering peak" (yes/no/missed/unsure).

Desiree also ask if it would be possible to provide by default "flower intensity" and he/she does not want to fill "peak flowering" needs to be filled ( yes/no/missed/unsure). So at least one field needs to be filled at the end.
For the editing later in the office an additional column should be available to fill in an estimated flowering peak.
