[Feature] Change Midnight Jobs to Custom Schedule

Hello, I brought this up in Discord but thought it would be best to make a formal request.

I would really like and appreciate the ability to customize the automated job schedule that Immich runs in the background at midnight each night, as specified from https://immich.app/docs/administration/jobs-workers/

Additionally, some jobs run on a schedule, which is every night at midnight. This schedule, with the exception of External Libraries scanning, cannot be changed.

I like to run my docker maintenance activities in the morning so as to avoid the sound of all my disks spinning up in the middle of the night (light sleeper, small apartment). So if we could get more options to set our own Cron expression(s?) for these background jobs, all together or for each specific task that would be super duper.

I second this. I also prefer to spin down my hard drive arrays when not in use and I already have all other maintenance tasks that access the hard drive scheduled in sync except for this one, so I just end up with a single spin up at midnight that I wish I could avoid. Allowing custom schedules for these jobs would be really helpful to optimize server maintenance windows.
