Running latest main on the demo instance

From what I gather the demo instance runs always the latest released version. Simultaneously after every release (at least in recent times), there is always one or two bug fixes releases need, because errors were not caught beforehand. One mitigation factor might be running the demo instance with the latest main, maybe those errors will be noticed sooner.

We test in all kinds of ways, of course. With how many users Immich has on all kinds of varied setups, people will always find problems we missed, even if we delayed the release by two weeks to spend all that time testing ;)
