[Feature] Support for setting oAuth configuration through environment variables

The feature

I'd like to configure Immich's OAuth authentication using environment variables. We're developing a self-hosted package that uses Pocket-ID for authentication, and we want to automatically set up Immich's OAuth configuration during our installation process.

I have searched the existing feature requests, both open and closed, to make sure this is not a duplicate request.

The problem with using a Config File for this is that the user then can't change any of the other settings. It could be solved for example by having an initial Config File.

I do not think we will plan to add any more env vars for this. You could use the API to automate updating the config if that will help your use case.
