[Feature] immich_build_info metric

I have searched the existing feature requests, both open and closed, to make sure this is not a duplicate request.

The feature

There should be a immich_build_info metric similar to prometheus_build_info with the version information of the currently deployed Immich version.

Turns out that this exists, but it's oddly named target_info.
