[Feature] Support for Live Activities on IOS

The feature

Since IOS is very strict with background running apps, currently if you start a backup with immich and go back to the home screen or lock your phone the backup will be paused/interrupted. What other apps are doing recently is using IOS live activities to keep the background operation going. Starting a backup or opening the immich app and automatically starting one should also start a live activity that says, for example, how many pictures you have backed up out of how many yoi have queued (similiar to the notification it sends right now "uploading 1/25 assets").

This would keep uploading assets even when the screen is locked or the user is browsing other apps.
