[Feature] Allow setting a birthday without requiring a year

The feature

Summary

Please allow users to set a person's birthdate using only the month and day, without requiring a year. This would support privacy-conscious users and better reflect common use cases where only partial birthdate information is known or desired.

Use Case

I’m using Immich for family/friends photo organization. I have several people tagged in photos (e.g., nieces, nephews, extended relatives) where I know their birthday but not the exact birth year—or I prefer not to enter it for privacy reasons.

Benefits

• Supports privacy-friendly tagging, especially for children
• Enables birthday reminders or filtering even without full birthdate
• Matches behavior found in apps like Apple Photos or Google Contacts
• Avoids misleading data in potential age-based features (e.g. 1900, 2000)

Proposed Behavior

• Make the year optional when entering a birthdate

I though the same when I first saw this feature, but then realised that the main goal of having a birthday set for people is to show the age that person was when the picture was taken. No-year birthdays is nice to have in Google and Apple, because their purpose is to remind you their birthday, but in my opinion that's not the goal of immich.
