[Feature] Historical data of server stats

I would like to see how the server stats are evolving over time to estimate the future storage demand of my server.

Maybe I could already do that with grafana and Prometheus, but it would be nice to have a little graph in immich directly.

Probably very niche and low priority but anyway nice to have :)
