refactor: switch to bignumber.js (#1803)

BREAKING CHANGE: All API methods that returned [`big.js`](https://github.com/MikeMcl/big.js/) instances now return [`bignumber.js`](https://github.com/MikeMcl/bignumber.js/) instances.
