The MAX31865 board is the sensor for the PT1000 RTD Temp probe

The MAX6675 board is optional - it monitors the fire pot for flameouts and relights it. Read this for more info on the firepot stuff:

There are also 2 versions of the MAX31865. You want the one with the 4300 ohm ref resistor for the PT1000
