Is it possible to checkout a single file in a different commit?

Yes: select the commit, press enter to see its files, select the file, and press c to check it out.

If it's in a different branch: select the branch, press enter to see its commits, then go from there.

I however was looking to do this specifically through the file. Something like:
-> Select File
-> Revert to...
-> Show list of previous versions of this file, and select one.

I realize that this is more personal and niche than an expected already existing feature so I'll probably create a custom command! Thank you again!

Maybe you'll find the "filter by path" feature useful for this then: select the file, press ctrl-s, enter to show only commits touching that file; this could make it easier to find the commit you want. You'll still have to press enter on that commit and select the file again to check it out, so maybe that's more keypresses than you want.
