Recover/reset web users credentials

Sorry for the stupid question: where are web paperless-ng users stored (to access the web interface I mean)? It's been 2 months I haven't used paperless-ng and I do not remember the user I set up.

I had a look at the docker volume within /usr/src/paperless but I couldn't see any file/folder where they could be stored.
Any hint will be appreciated.
