Replace `1.0-UNKNOWN` version string with less ambiguous `UNKNOWN`

The 1.0-UNKNOWN looks a bit ambiguous and confusing and people tend to be asking version of what it is:

Can this be changed to just UNKNOWN please?
(not sure why Kafka-UI can't identify version of AWS MSK 🤷🏻)

That's weird, used to work with MSK. Are you on serverless or not?

Regarding the version, guess we could change that, but we'd need to take a look if there's any possible parsing involved.

Just a gentle reminder. We're still testing out deployment of new version of Kafka-UI in our Terraform module and hence can also assist investigating this issue if necessary.

yeah this can't be removed straightforward, there's a version parsing involved further to determine a set of available (supported) cluster features.
