Given the supply chain issues with STM at the moment, do you think a port to use the GD32F105 would be possible / difficult?

Possible and probably not too hard. I am not motivated myself as the supply of Artery chips is fine, and there is a new larger-RAM Artery chip becoming available on Goteks in the next month or two.
