Encoding problems in Primefaces 12

Describe the bug
There seem to be a problem with storing text strings like "Universität" in the project METS settings with Primefaces 12. (Problem does not appear in Kitodo 3.9)

I looked into the stored data in the database and the German umlauts get stored in wrong way.

So far as I can see the meta data editor is not affected by this. User input it stored in correct way in the meta data file.

Is maybe the default encoding in PrimeFaces 12 wrong? On usage with Omnifaces you can change the encoding for any kind of request: https://showcase.omnifaces.org/filters/CharacterEncodingFilter but I don't know if this is still needed for PrimeFaces 12.

to the web.xml fixed the bug for me. But now i cannot reproduce the faulty behaviour in main anymore. Maybe some other change fixed it?

I just tested this on the current main branch (without ever applying the additional character encdoding filter mentioned above) and now the enconding problems seem to be gone for me as well. This would support the theory that some other changes already resolved this issue in the meantime...
