Automate EPP image updates in conformance tests during release

Pinning the EPP image for conformance tests is introduced in #1262

While pinning the EPP image version enhances test stability, it can become outdated as new versions are released. This requires manual updates to the test manifests to keep the EPP image current. We should make sure this version is updated in the release script.
