Readme updates

Before the real release, address:

- [ ] Better overview of what this project is and where it's headed
- [ ] Update the demo video to include latest viz and other features
- [ ] Clean up any setup issues (e.g. remove https from allow-websockets-origin)
- [ ] Make sure to add data attribution upfront in the Readme for Landsat/Sentinel
- [ ] ...
