Is there any documentation related with the except setting of maitenance mode?

Didn't find any documentation related with that specific setting. Is there any?

I was initially confused what was the difference between the maintenance mode bypass via a secret and the except, but later doing some testing I understood that the except is not going to bypass maintenance, just skip the pre-rendered template. Could be good to document that if it isn't yet.
